Instructions
Peel oranges, cut into quarters and remove seeds, working over a bowl to collect the juice
Place the quarters in a dish, add sliced red onion and our

For seasoning: whisk olive oil with reserved orange juice and add lemon juice, salt, pepper and spices (cumin, sweet pepper or coriander powder)
Stir everything together and place a few mint leaves
Serve chilled
